Bundaberg Over-proof Rum has been around for as long as its Under-proof brother. It is based on the same spirit, and blended to extra strength. Affectionately dubbed 'Bundy Rum', this national favourite was the brainchild of a small number of ingenious farmers who in 1888 stumbled upon a creative function for the surplus molasses that resulted after harvest.
So why is it called Over-proof? Back in the early days there weren't any sophisticated instruments to measure the alcohol content, so an ingenious test was used to determine the strength of spirits. Ordinary gunpowder was saturated with the spirit. If, when lit, the powder flashed, it was over-proof. If it did not, it was under-proof.
Also going by the alias of 'Cane Champagne', Bundaberg Rum is a full bodied, rich and distinctively flavoured rum, produced today by following the same time-honoured processes that made the spirit great in the first place. Playing host to a stronger rum taste, due in part to larger ageing vessels and a unique distillation process, Bundaberg OP rum is the perfect accent in cocktails.
